am curious - shouldnt the recipe read OX kidney rather than beef kidney????? gwen manickam

I don't see what difference it would make if you used kidneys from oxen, bulls or cows. It's still a bovine renal organ. When a bull becomes an ox, it doesn't lose its kidneys. Tubezone 18:16, 30 October 2006 (UTC)[reply]

At some time, this article was latered to replace 'beef kidney" with "lamb or pig kidney". I find this strange as a) I always use beef kidney and b) the recipe linked to also specifies beef kidney. To me it's always been labelled beef or OX kidney they're the best for smoothness of texture and flavour, that said I now live in Finland and its hard to get any of those so you have to use pig (if you're lucky lamb), OK the taste and texture is not quite as nice, but we have to make do with what we can get.
I just made one, I have a couple of pictures, I think a lot better than the current one, that said they are not really that great, but maybe we could use them, I'll post anyway. --Hellahulla 19:17, 13 November 2007 (UTC)[reply]

I've proposed that Steak and kidney pudding be merged to this article.

It's with something of a heavy heart... where I live (Glasgow) "Steak and kidney pudding" tends to be the common term. And I gather pies and puds are different. However... I don't feel that the differences are sufficient to justify two separate articles - the only difference seems to be that puds are made with suet. This article ("pie") seems to be the more exhaustive article, and already includes mention of puds. TFOWR 08:30, 7 October 2010 (UTC)[reply]

  • Oppose They are very, very different things: The whole suet thing is a red herring - pastry for savoury dishes is often made with suet, and pudding mix can quite happily be made with other fat.
