Scorzonera roots are used as a cheap replacement for asparagus or for their own sake in Germany for instance, and are called "Schwarzwurzeln" ("black roots") there. They're regarded as a staple vegetable there. Scorzonera root has a mildly sour taste and a firm texture. They're white as asparagus inside when the black skin is removed. The roots are often sold in cans (skinned). I've just eaten some!
