Inconsistency[edit]

Veloute says that there are 4 mother sauces, this page says 5. The generic page on sauces is a bit vague on the subject. Which one is it? -- Taotriad (talk) 22:14, 12 November 2009 (UTC)[reply]

Indeed. The page linked in the main article, http://chefsrecipecatalog.blogspot.com/2007/02/mother-saucesespagnole.html, tells us of not five, but SIX mother sauces in French cuisine:

  • Mayonnaise
  • Hollandaise
  • Veloute
  • Espagnole
  • Bechamel
  • Tomato Sauce

Capitalization of "africaine"[edit]

Is there any authority for capitalizing "Africaine" when this wouldn't be done en français? If no one objects in the next week or so, I'm going to rename the article to reflect the correct capitalization. - Julietdeltalima (talk) 19:08, 30 April 2018 (UTC)[reply]
